A live action cooking item prepared on Mondays and Wednesdays.
A paper dosa reflects the influence of Tamils on Sri Lankan cooking.
You can think of it as a large, thin, crisp savory crepe.
The batter is made of rice, lentils, fenugreek, clarified butter, and salt.
Served with potatoes blended with turmeric, mustard seeds, and cashews.

Coconut Roti with Dal (Tuesday & Saturday)
A live action cooking item prepared on Tuesdays and Saturdays.
Coconut roti (pol roti) is a classic Sri Lankan dish. You can think of it as a savory coconut pancake.
The batter is made of flour, coconut, chopped onions, and water.
Served with side dishes including lentils (dal) and sweet tempered onions.

French Toast (Wednesday)
A great French toast begins with thick, locally baked bread.
We give our French Toast a distinctly Sri Lankan flavor by making it with coconut milk, Ceylon cinnamon and kithul treacle.
Kithul treacle is made from the sap of the jaggery palm.

Egg Hoppers (Thursday & Sunday)
A live action cooking item prepared on Sundays and Thursdays.
An egg hopper is uniquely Sri Lankan.
It is a lace-like crepe. The batter consists of rice flour, coconut milk, yeast, and sugar.
A fried egg is embedded in the batter.

Coconut & Banana Porridge
We first had this fantastic dish in Goa and introduced it to Sri Lanka.
Prepared with oats, coconut milk, and bananas.
We give our coconut porridge a distinctly Sri Lankan flavor by adding Ceylon cinnamon and kithul treacle.
Kithul treacle is made from the sap of the jaggery palm.

We discovered blue tea on a trip to Indonesia.
Blue tea is made from the butterfly pea plant.
We were so inspired that we now grow the butterfly pea plant on site so guests can enjoy this vibrant blue tea from flowers picked on site.
